Flip the crab over
Flip the crab over so that the shell is facing down.
Open the body
Hold both legs firmly and gently pull them outward to split the body open along the center.
If it’s hard to apply enough force, you can also use kitchen scissors to cut along the side of the shell.
Remove the gills
Use your hands to remove the white, feathery parts found inside the crab’s body.
These are the gills, which are not edible, so be sure to remove them completely.
Don’t forget the crab miso
There is still some crab miso (crab butter) left inside the body—please use your chopsticks to enjoy it!
 Cut the legs and claws
While bending the joints of the legs and claws, use kitchen scissors to carefully cut them apart.
Tip: It’s easier to cut if you insert the scissors at the joints.
Get the meat from the legs
Score the shell and enjoy the meat inside.
When eating the crab legs, use kitchen scissors to cut a slit in the shell and break it open. This will make it easier to remove the meat cleanly.
Using chopsticks can help you eat it more smoothly.
